Recently, “The Grand Hotel” in their Indian speciality restaurant, Caraway did a culinary voyage which curated around the alluring Flavours of Kashmir in association with “Saal”. I was invited by “The Grand Hotel” & by Mr. Sunil Tickoo to relish it. As I was occupied, so I had to miss the opportunity of enjoying this lovely meal. All these dishes below looks yummy!
“Saal”- flavours of Kashmiri Cuisine is a concept of catering all needs of the Pandit cuisine food, where in you can enjoy a traditional Kashmiri meal prepared by professional cooks & chef who have worked under trained valley chefs. The menu of Saal, includes delicacies like : Roganjosh, Yakhni Dum Aloo, Kashmiri Haakh, Tamatar Chaman ,Chok Wangun (Khatte Baingan) , Nadhur Yakhni, Badrawah Rajma, Phirni etc along with traditional Kawah Chai .
Mr. Sunil Tickoo is the man behind the scene, with extensive experience & knowledge in F&B. He has worked both in India & Abroad, with over 23 years of experience in hospitality business, have worked with a start-up at Hyatt –New Delhi ,TAJ MANSINGH , GAYLORD Hong Kong , VICEROY Hong Kong , PIZZA EXPRESS INDIA , W G Hospitality / QBA New Delhi etc
In the past, Saal has also participated in a Kashmiri food festival at ”The Four Seasons Mumbai.” They master in preparing the menu as per the function’s requirements. Not only this, they can also create an environment of mini Kashmir by sourcing & arranging Kashmiri Singers & frills; kashmiri handicrafts too can be added to the occasion.
Whenever, I dig on Kashmiri food, I simply savour the fragrance which comes from it & the taste is mouth-smashing. A sip of kawah is something which I always enjoy.
